Las Ventanas al Paraíso, A Rosewood Resort (Los Cabos, Mexico), has partnered with Bonberi, a plant-based lifestyle market in New York City for a vegan pop-up. The pop-up opened on March 20, 2021 and will last for a year offering plant-based dishes inspired by the flavors and ingredients of Mexico. Bonberi founder and recipe developer, Nicole Berrie, worked alongside Diego Stefan, executive chef of Las Ventanas, to design customized dishes that fuse Berries vegan delicacies with the flavors of Mexico. “I'm beyond thrilled to be a part of this special project with Las Ventanas al Paraíso, one of my very favorite resorts,” says Berrie. “Together with chef Diego Stefan, we have curated a menu of thoughtful, abundant, plant-based dishes, rich with local, organic ingredients. Each dish is designed to gently awaken, cleanse, and indulge the senses and I am excited for guests to get the full Bonberi experience while staying in paradise.”
Guests can enjoy a Green Goddess Smoothie Bowl with fresh fruits and Bonberi grain-free coconut granola for breakfast at the resort’s Sea Grill near the sand, and a Dulse Caesar Salad for lunch. For dinner, the Brussels Tacos with Creamy Vegan Elote Salad is offered along with a Passion Fruit Coconut Milk Crème Brulee for dessert. Poolside, smoothies, juices, and other dishes will be available including a Avocolada smoothie with avocado, pineapple, coconut meat, coconut water, lime, and vanilla and a Vegan Coconut Ceviche. At the tiki hut, guests can have Bonberi Popsicles for a refreshing midday treat. At The Spa at Las Ventanas, guests can choose light but satisfying dishes such as Nori Chickpea Tuna Rolls made with nori, sprouts, avocado, tomato, romaine, chickpea tuna and a spicy raw cashew aioli, and served with pickled shaved cucumbers or a fresh juice like “Drink the Sun,” made with kale, celery, fennel, cucumber, ginger, and lemon. “We are excited to elevate our wellbeing initiatives and promote healthy living in partnership with an acclaimed partner like Bonberi,” says Frederic Vidal, managing director of Las Ventanas al Paraíso and regional vice president Rosewood Hotels & Resorts. "Las Ventanas is a sanctuary for renewal and revitalization, and we look forward to offering a mindful and organic culinary journey for our guests with the Bonberi pop-up.”
Berrie will also lead cooking classes in the resorts Herb Garden and educate guests on the Bonberi philosophy of achieving a lifestyle through clean meals.
