Health-conscious spa-goers at The Retreat Costa Rica (Atenas) can indulge in a healthy plant-based menu of snacks, smoothies, organic and biodynamic wines, and more at the recently debuted Gratitude Lounge Café. Located next to the Vida Mida Healing Spa's Gratitude Lounge, the cafe offers a full á la carte menu with offerings such as Portobello Cassava Tacos; Sloppy Jacks, which are made from cashew bread and jackfruit with a papaya barbecue sauce; and Vegan Crab Cakes (pictured here), made from hearts of palm.
The menu was designed by The Retreat’s founder and owner Diana Stobo, who is also a celebrity chef, author, and health and wellness life coach. “I wanted to offer a bit of decadence and comfort to the new Gratitude Lounge Café menu while still adhering to our anti-inflammatory cuisine at The Retreat Costa Rica,” says Stobo. “The Fiesta Nachos, Sloppy Jacks, Portobello Cassava Tacos, and decadent milkshakes fulfill the need for a little naughtiness while maintaining a healthy diet.”
